家常馅料必知面团
制作家常馅料,除了需要掌握馅料的制作方法外,还需要首先调制各种面团,调制面团包括和面及揉面两个过程。和面就是将各种粮食粉料与适量清水、油脂、蛋液和填料等掺合在一起,和成一个整体的面块;揉面是把和好的面块进一步加工成适合各类面点制作需要的面团。面团可分为水调面团、膨松面团、油酥面团、蛋液面团、米粉面团和其他面团几种。从中又可细分为冷水面团、温水面团、热水面团、面肥发酵面团、干酵母发酵面团、酥皮面团、单酥面团、纯蛋面团、油蛋面团、水蛋面团、米粉面团、发酵粉团、澄粉面团、山药面团、果类面团等。
